I’d been craving a breakfast bread for a while, so I came up with this recipe. It’s a bit dense, so if you wanted to take out some flour or add some baking soda, try it!
Oatmeal Breakfast Bread:
Prep: 10 mins, Cook: 45mins; Yield: 1 loaf
You’ll need:
- 1 cup whole wheat flour
- 1 1/2 cup oats
- 1 cup applesauce
- 1 apple
- 1 egg
- 3/4 cups blueberry
- 1/3 cup yogurt
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 teaspoon cinnamon
- 1/4 teaspoon nutmeg
- 2 tablespoons brown sugar
- 4 tablespoons olive oil
1. Mix dry ingredients.
2. Dice apple.
3. Combine wet ingredients and fruit with dry ingredients.
4. Bake for 45 minutes or until toothpick comes out clean.
